In Italy, the world of Gin is still unexplored and underestimated by many. Franco Cavallero wanted a wholly Piedmontese Gin, with unique characteristics and unmistakable taste. Gin is a beverage obtained from the infusion of juniper berries in alcohol produced by the distillation of grains (wheat, barley, corn, and rye), flavored with plants and spices, the taste of which should never overpower that of the juniper.

In modern Gin, there is a tendency to find its own expressive mode, making each recipe unique. Italy boasts a long tradition of juniper-based distillates, as this evergreen shrub, typical of the Mediterranean region with a balsamic and pungent aroma, has spread across the Alps, the Apennines, and Sardinia.
